Tonight we made quinoa with lentils, carrots, peas and green bean puree. A bit of wheat germ was added as a nutrient boost. We also had grilled chicken. Nothing else was added but a bit of salt at the table. I expect we will wean ourselves from salt after a few weeks. Although quinoa is fast, I already had it ready in the fridge. The lentils had already been soaked and were also happily waiting in the fridge. We mixed the quinoa, lentils, carrots and peas in a large frying pan and waited until the carrots softened. Poor planning on my part, but I had frozen all the purees and forgot to pull one out for dinner. We had to microwave the green bean puree, but it was a yummy addition. We did cook with olive oil, but I wonder if more puree will eliminate the need for oil. Dinner was officially approved by my husband’s sister and brother. They were pleasantly surprised (or relieved). I admit that everyone else except me used BBQ sauce on the chicken. I will need to find a healthy substitute. All in all dinner took about 20 to 25 minutes. I think the carrots got us, but with some practice we will get faster. Dessert included black bean brownies!
