Love those quick, one pot meals! Brown rice, black beans, turkey, kale and veggies all got thrown in together. The rice, black beans, and kale were prepared ahead of time. We added carrots and a bag of mixed frozen veggies (corn, peas and lima beans). Then we added 6 spoonfuls of kale puree as a nutrient booster. The kale puree also added moister to the rice. Finally, we added some soy sauce at the table. (Maybe we’ll cut that out soon!) That’s it! It was tasty, healthy and quick!
Next: The kale puree challenge! How many ways can we have kale puree? In smoothies? In pancakes? In muffins? Added to pasta? Spread on sandwiches? What else?
Also, we tried the dishwasher soap recipe from my last blog and it worked great! 1 T Borax + 1 T Washing Soda per load. Easy!
